Super Green Falafels!

I am so in love with these falafels!  Somewhere along the way I saw a recipe for them, but not being able to find it again I relied on my skills  and they came out just great!! 

They are easy to make, taste amazing, freeze well, and only require a few low cost ingredients. What’s not to love, right??!!  

Staying the course on a plant based diet is easy if you are prepared with some emergency options, and this is definitely one of them!  Just pull out a pack from the freezer, pan fry them, whip up a salad and dinner is done:)

Super Green Falafels 


4 cups of packed kale

2 cups garbanzo beans(I like to cook up big batches of fresh beans and potion them into 2 or 4 cup freezer packs)

3 cloves of garlic

2 Tbsp. Lemon juice

4 Tbsp. Tapioca or gluten free oat flour

1/2 Tbsp. Sea salt

Grind everything in a food processed until combined. Preheat oven to 375.

 Scoop out and flatten on an oiled baking sheet. Oil the top of the falafels.  Bake for 12 minutes, flip and bake for another 15 minutes.  Either eat right away or let them cool and freeze them.

I served these little gems with a few stripes of garlic aioli, and a taco inspired quinoa salad complete with home made guacamole.  I’ll save the taco salad recipe for another day:)
