Comfort Food Sunday!!
Sometimes I just want to curl up and eat a hot bowl of something comforting, and this rainy Sunday calls for some plant based comfort food to fill my belly to the brim with warmth and goodness .
I need to eat lots of veggies though, I just don’t feel good if I don’t eat a pile of veggies every day…and today will not be an exception!
The answer….Veggie Casserole!! With a side salad of greens (romaine, shredded kale, and scallions) dressed in a light flax oil and lemon dressing, pure bliss!!

Veggie Casserole
Ingredients:
4 medium carrots, diced
1 head of broccoli, discard stem and chop floweretts in half
1 large red pepper, chopped
1 medium red onion, chopped
1 Tbsp. Coconut or safflower oil
Sea salt and black pepper
Sauté in a wok until tender but not mushy
3 cups of cooked brown rice or lentils
Combine lentils or rice with the sautéed veggies in a mixing bowl
In a blender combine:
11/2 cups of cashews
3 cloves of garlic
1 tsp. Cumin
1/2 tsp. Thyme
1/2 tsp. Dill
Pinch of nutmeg
1/4 cup of lemon juice
11/2 cups of water
Mix sauce in with the veggie mix and pour into a baking dish. Bake in a preheated oven 375 for 1/2 an hour to 45 minutes.
