Paleo Vegan Quiche!

One of my favorite brunch specialities!  
Paleo Vegan Quiche

Ingredients:

1 pkg. silken tofu

1/2tbsp. Tumeric

1 tsp. Black salt(sulfer salt)

2 Tbsp. Cornstarch

1/4 cup lemon juice

1/2 tsp. Sea salt

2 Roma tomatoes, diced

2 cloves of garlic, minced

1 handful of basil, chopped

Preheat oven to 375

Oil a 6″ cake pan

In the bottom of the pan place some slices of tomatoes


In a food processor combine all the ingredients except tomatoes, basil, and garlic.  Process until combined. Scrape and process again. 

Pour 1/2 the tofu mixture over the tomatoes in your prepped pan.  Add the diced tomatoes, garlic, and basil. Top with remaining tofu mixture.  


Bake 50 minutes. Let cool slightly and flip out of the pan.

I served this quiche up with a kale Greek salad.  It was so delicious!!  Make it for brunch, take the leftovers for lunch the next day.  

 


There you have it!  Protein rich, super healthy, easy, and incredibly delicious.
