After a visit to local Farm Market and indulging in freshly picked strawberries I am ready to kick off the summer in a healthy vegan style, what better to celebrate a sweltering hot day than with a delicious refreshing smoothie??!! Freezing freshly harvested strawberries is the perfect way to preserve the summer sunshine for a wholesome snack.
Light and sweet, yet very filling this smoothie is rich in Vitiman C, fiber, and plenty antioxidants to keep you healthy. What’s not to love?
11/2 cups of frozen strawberries
1 cup of apple cider or apple juice
Coconut Whip Cream
1 can of full fat coconut milk
2 Tbsp. Maple syrup
Put the can of coconut milk in the refrigerator for a couple of hours to chill. Open can, scrape off the cream into a stand mixing bowl, add maple syrup and whip on high until stiff peaks form.
Top your smoothie with the whip cream and drizzle a little maple syrup over the top. Finish with a few sliced berries:).
