Italian Style Rawsome Dinner!

I have gone on and off a raw diet for a few years now.  I really enjoy eating raw but I don’t think that I could ever do 100% raw because first, I live in a cold climate and it is really hard to stay warm on a raw diet I find, second I just love food too much to give up all the great vegan food out there.

I go raw when I feel a little heavy or just want to eat clean for a while to detox.  I go at it for a month or so, juicing daily, lots of fresh fruit and tons of veg.  I find I don’t do well when I go for a lot of nuts or too much cashew cheese, but a girls got to eat you know what I mean!!  This meal is very simple and comes together in just a few minutes.  



My raw day started out with a big bowl of sliced ripe bananas, strawberries and mango.  Followed up with raw tacos and a kombucha for lunch, and for this evening I did this Italian Style Rawsome Dinner!  It was completely delicious!! I am so full right now, but I don’t feel heavy or weighed down, I don’t feel guilty, and I have plenty of energy that finish this post, return some work emails,  and the rest of my housecleaning before calling it a night.

Simple Raw Lasagna:

Ingredients:

1 zucchini sliced into very thin strips, I use a vegetable peeler.

1/2 avocado, sliced thin

1 Roma tomato, sliced thin

3 basil leaves,chopped

1 clove of garlic, minced

1/4 cup of chèvre style cashew cheese

 

Start with a layer of zucchini, top with a spread of cashew cheese, layer of avocado slices, layer of tomato slices, a few sprigs of the chopped basil, a few pieces of garlic and a sprinkle of sea salt. Repeat the layering.  Top with a few minced tomatoes.

Colorful Zoodles With Fresh Tomato Sauce And Zucchini Ravoli


Ingredients:

1 zucchini, noodled with a vegetable spiralizer, or a hand held noodle maker

1 carrot, noodles

Fresh tomato sauce:

2 Roma tomatoes minced

1 clove of garlic, minced

Sea salt

Mix together and let sit for a few minutes.

Ravoli:

1 zucchini, sliced very thin with a vegetable peeler

4 tsp. Cashew cheese

Put your noodles in a bowl, make the ravioli by crisscrossing the zucchini with a tsp. Of cashew cheese in the center and fold up into a ravoil. I made 4 to go in my bowl.


Top the noodles and ravoil with the tomato sauce.
