Ultimate Plant Based Sandwich Filling!

I am a sucker for a great sandwich (or wrap)! A sandwich to me speaks of the simplicity of lunch.  You don’t need to be fancy, just filling, nutrient rich, and delicious.  With a few simple and affordable ingredients on hand this filling can be made in less than 15 minutes and lasts in the refrigerator for 5 days so you can have a few lunches from it.

So go grab some wholesome bread, load it up with this incredibly tasty and nutritious filling 🙂

Chick Pea Of The Sea!


3 cups of cooked chick peas (I like to cook up big batches of beans and break them down into freezer packs.  Take it out of the freezer and put it in the refrigerator the night before you intend to use them)

1 red onion, minced

1/2 a head of celery, minced

2 cloves of garlic, minced

1/2 bunch of parsley, chopped

Zest and juice from one lemon

1 avocado, diced

4 sheets of nori, I use scissors to cut the nori into strips, then cut the strips into little squares

Add chick peas to a food processor and pulse a few times to chop them up.  Remove from processor and put in a mixing bowl.  Add the celery, onion, acocado, parsley, nori, and lemon juice.  Season with sea salt and black pepper. 

Cashew Mayo


1 cup of cashew pieces

11/4 cups of pure water

1/4 cup of lemon juice

Pinch of black salt (sulfer salt)

1 tsp sea salt

Blend in a high speed blender until smooth and creamy.

Add to the chick pea filling.

You are all set! 

Delicious on its own as a gluten free, grain free option, or lay down a whole wheat wrap and top with some shredded lettuce and kale.  Place a few scoops of Chick Pea Of The Sea filling, add some sprouts, tomato if you like, green peppers are also really yummy with this filling.

Chick Pea Of The Sea filling is also great as a hot melt with your favorite plant based cheese:)
