Coconut Cashew Pudding Parfait!![Vegan, Gluten Free]

I hope it is for you anyway.  It usually takes me a couple of days to adjust to the change, and honestly I am not a fan of the long and dark winter months.  Although the darkness  does lend itself to romantic candle lit dinners and long hot baths, I much prefer the sunshine to soak up Vit D:)  So in the spirit of it getting dark at 4:30pm I am sharing with you one of my favorite holiday desserts to add a cheerful pop of seasonal color and a dash of sweetness while keeping it real. (real food, that is;)  The temptation to eat crap during these months is tremendous with parties, gifts, rich foods and plenty of alcohol.  Arm yourself with healthy alternatives to avoid the temptation!!



Coconut Cashew Pudding Parfait!
(Recipe found in my Real Food Reset Guide)

Serves 4


2 cups of cashew pieces
1 1/2 cups of pure water
1/8 tsp.sea salt
1/4 cup of pitted dates
1 tsp. vanilla extract
1/2 cup of shredded coconut

Add cashews, sea salt and water to a high speed blender and blend until completely smooth, scraping down the blender as needed. Add the dates, vanilla and coconut and blend until smooth.  Place pudding in the refrigerate for at least 4 hours before serving.


To assemble the parfaits, spoon some of the pudding into a serving dish, I used small mason jars, if I had been more thoughtful I would have tied a little red ribbon with a pinecone around them for the holidays. Next put down a layer of  the maple almond and cranberry mix and a teaspoon of maple syrup.  Do another layer of pudding, nut and cranberry mix and top with another teaspoon of maple syrup.


Malpe cranberries and almonds:
1/2 cup of sliced almonds
1/4 cup of broken walnut pieces
1/2 cup of fresh cranberries
1/4 cup of pumpkin seeds
2 Tbsp. maple syrup
pinch of sea salt

Preheat oven to 350.  Oil a baking sheet and set aside. Combine all ingredients and spread out evenly over the baking sheet.  Bake for 15 minutes.  The cranberries should have popped and become a little juicy and the almonds and walnuts should be crisp.  Let cool completely.    What you don’t use in your parfaits you can store in an airtight container.
