Beet and Brown Rice Burgers!![vegan, gluten free]

Burgers.  Who doesn’t love a juicy flavor packed burger? They are great as a anytime meal, please just about everyone, and the flavor profiles are endless.  These hearty, and juicy beet and brown rice burgers have impressed even the most picky meat eater that I have ever known!!


They are easy to make, freeze well for weeknight family meals and with just a few steps of preparation you have a healthy, gluten free, fiber and nutrient rich meal!!


Beet And Brown Rice Burgers

Ingredients:

2 cups of red beets, shredded

4 cups of over cooked and cooled brown rice (add extra water and cook about 10 minutes over, you want a very soft grain)

1 cup of white beans, puréed with 1/2 cup of water

2 tsp. garlic powder

2 tsp. Onion powder

1 tsp. Paprika

1 Tbsp. Vegan Worcestershire sauce

1/4 cup onions, minced

Sea salt and black pepper to taste.

Add  all ingredients to a mixing bowl and mix throughly, squeezing all the ingredients together.  Scoop out with a large ice cream scoop and form into Burgers.  Freeze wrapped in freezer bags or let set up in the refrigerator until you are ready to use.

Heat about 1 Tbsp. Of oil in a fry pan and cook over medium heat for 5-7 minutes, flip and cook another 5-7 minutes.  Add a little extra oil if they seem like they are sticking to the pan.  You should have a crispy on the outside hot and juicy on the inside burger to enjoy.


I like to serve them with lettuce, tomato, avocado slices, sprouts, thinly slices red onions, and top them with sun dried tomato vegan aioli!! Delicious!!
